Why it works: Sugar and gelatin are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 2,778 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 265°F (130°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the taffy base
Soak the gelatin in cold water for 15 minutes.
In a large pot, combine sugar, glucose, salt, and paraffin wax with 1 quart of water.
Boil the mixture until it reaches 265°F (130°C).
Add butter and gelatin
Remove from heat and add the butter, allowing it to melt.
Return to heat, stir, and boil until the butter is fully incorporated.
Remove from heat and add the soaked gelatin, stirring well.
Cool, pull and set
Pour the mixture onto a slab, turn up the edges, and cool quickly.
Once cooled, hook the taffy and pull until stiff and thin, then place in pans.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Granulated sugar
- Provides the bulk of the sweetness and forms the crystal-free structure of the taffy.
- Glucose
- Inhibits sugar crystallization, keeping the taffy smooth and chewy rather than grainy.
- Butter
- Adds fat for a tender texture and rich flavor, softening the chew.
- Gelatin
- Adds elasticity so the taffy holds its shape and pulls into a firm, springy texture.
- Paraffin wax
- Gives the taffy a glossy sheen and helps it release cleanly from the pan.
The step that matters
Boiling to 265°F (130°C). Cooking to this temperature controls how much water remains in the sugar syrup. Undercooking leaves the taffy soft and sticky, while overcooking makes it hard and brittle.
