Blanched Almond Dragees
Ingredients
Directions
The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.
Boil some water and add the almonds.
Once the skin begins to come off easily, drain the water without cooling the almonds.
Place the almonds on a table and cover them with a wet cloth.
Blanch the almonds quickly and place them on hair sieves to dry in the air overnight.
Dry the almonds in the oven at 300°F (150°C) to prevent cracking, stirring carefully from time to time.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
