Bacon Dragees
Ingredients
Directions
Boil hard sugar at 300°F (150°C) until it reaches a workable condition.
Pull the sugar thoroughly and color a small batch dark brown, another small batch red, and leave the rest uncolored.
Roll out the coffee-colored sugar to create a thin layer for the rind.
Roll out the uncolored sugar thicker for the main body.
Roll out half of the red sugar, then roll out the remaining white sugar, and finally roll out the rest of the red sugar.
Layer the roll-outs in the order indicated.
Draw out the layered sugar into a flat strip about ⅛ inch thick and slightly over ⅜ inch wide to resemble bacon slices.
Once cold, cut into pieces like rock candy.
