How to Glaze Burnt Almonds
Ingredients
Directions
Melt some gum, but do not make it too liquid, and strain it through a sieve.
Color the gum to match the shade of the almonds by dipping one almond into the hot gum solution.
Pour the gum over the almonds while they revolve, and stir them thoroughly with a paddle.
Ensure the almonds are not too wet, as excess gum is harmful.
Place the almonds on large trays and let them dry at the stove, shifting them around occasionally.
For a durable gloss, glaze the almonds again while hot after the first glazing has dried.
To enhance the glazing, mix a little glucose into the hot gum before glazing.
