Almond Slices

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Preheat the oven to 300°F (150°C).

  2. In a large bowl, mix sugar, flour, eggs, ammonia, and chopped almonds until well combined.

  3. Roll the dough out on a clean surface to about 1 inch thick and 2 inches wide.

Shape and bake

  1. Cut the dough into slices ½ inch thick using a sharp knife.

  2. Place the slices on baking pans with the cut side facing up.

  3. Wash the tops with beaten egg.

  4. Bake in the preheated oven until lightly golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the dough and add richness and structure as they set in the oven.
Flour
Provides the main structure of the dough once baked.
Sugar
Adds sweetness and helps the tops brown as they bake.
Chopped almonds
Add nutty flavour and a firm, crunchy texture to the slices.
Ammonia
Acts as a leavening agent, releasing gas to lighten the dough as it bakes.

The step that matters

Baking until lightly golden. The dough is dense and sugary, so it can darken quickly at the edges before the centre sets. Watching for a light golden colour rather than a deep brown keeps the slices tender and evenly baked.
