Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream the butter or lard with the sugar until light and fluffy.

  2. Add the eggs one at a time, mixing well after each addition.

  3. Stir in the milk, baking soda, and ammonia.

  4. Fold in the crumbs, shredded coconut, chopped almonds, and flour until well combined.

Bake

  1. Spread the mixture into a greased baking pan.

  2. Bake in a moderate oven at 350°F (175°C) until golden brown.

What each ingredient does

Eggs
Bind the batter and add structure and richness as they set in the oven.
Butter or lard
Creaming with sugar traps air and adds tenderness and fat for a short crumb.
Sugar
Sweetens the bars and helps browning as the surface bakes golden.
Flour
Provides the main structure that sets as the bars bake.
Baking soda
Reacts with the batter's acidity to produce gas that helps the bars rise.
Ammonia
Acts as a leavening agent, releasing gas during baking to lighten the bars.
