Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Provides the main sweetness and forms the crystal-free sugar structure of the candy when cooked.
Glucose
Inhibits sugar crystallization, keeping the taffy smooth and chewy rather than grainy.
Butter
Adds fat that softens the chew and gives the taffy a rich flavor and tender texture.
Glycerine
Acts as a humectant that holds moisture, helping the taffy stay soft and prevents it from hardening.

The step that matters

Cooking to 260°F (127°C). The final temperature sets how much water remains in the sugar syrup. Undercooking leaves the taffy sticky and soft, while overcooking makes it hard and brittle.
