Ingredients

Directions

Make the taffy base

  1. Combine granulated sugar, glucose, butter, nucoa butter, and gelatin dissolved in hot water in a kettle.

  2. Add enough sweet cream to dissolve the sugar.

  3. Cook the mixture to about 260°F (127°C).

Cool, pull and flavor

  1. Pour the cooked mixture onto a slab and let it cool.

  2. Once cool, pull the taffy on a hook and flavor with vanilla.

  3. For chocolate flavor, add ½ pound of bitter chocolate.

What each ingredient does

Granulated sugar
Provides the sweet body and, when cooked, the firm structure of the taffy.
Glucose
Inhibits sugar crystallization, keeping the taffy smooth and chewy rather than grainy.
Butter
Adds fat for a softer bite and rich flavor.
Gelatin
Adds elasticity so the cooked mass can be pulled and holds its chewy texture.

The step that matters

Cook the mixture to about 260°F (127°C). The final temperature sets how firm the taffy will be once cool. Undercooking leaves it soft and sticky, while overcooking makes it hard. Sugar concentration rises as water boils off, so the reading determines texture.
