Preserved Cherries
Ingredients
Directions
Simmer cherries in a syrup made of sugar and water without boiling to prevent bursting.
Cover the cherries with syrup and let them sit overnight.
The next day, drain the syrup, boil it, skim it, and pour it back over the cherries.
Repeat the boiling process two more times for a total of three boils.
On the fourth day, drain the cherries and place them on clean wire trays to dry.
Dry the cherries at a low heat to maintain their light color.
Once dry, pack the cherries in boxes lined with clean paper.
