Why it works: Pistachio and vanilla match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 407 recipes. Both carry alpha-pinene, which smells pine, turpentine. The science ↓

Pistachio Cracklings

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, thoroughly mix the shredded pistachios, pounded pistachios, sifted sugar, egg whites, and vanilla sugar.

Shape and bake

  1. On a baking sheet lined with wafer paper, place small mounds of the mixture about 1.5 inches apart.

  2. Shape each mound into a circular form, about ¼ inch thick, using a wet fingertip.

  3. Bake in the preheated oven until light in color.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shredded pistachios
Provide the main nutty flavor and bulk of the cracklings.
Pounded pistachios
Fill gaps between the coarser pieces, giving a denser, more cohesive texture.
Sifted sugar
Sweetens and helps the mixture brown and crisp as it bakes.
Egg whites
Bind the nuts and sugar together so the mounds hold their shape.

The step that matters

Bake until light in color. Sugar darkens quickly once it passes light golden, so pulling the cracklings at the right moment keeps them crisp and prevents a bitter, burnt taste.

Swap the pistachio

How well each one fits the dish's main ingredients (sugar, egg, vanilla):

  1. Almondfits better
  2. Chestnutfits better
  3. Hazelnutfits better
  4. Pistachiothe original

Fit is the average pairing score against sugar, egg, vanilla. Candidates are from the same food group and used in at least 100 recipes.
