Why it works: Pistachio and vanilla match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 407 recipes. Both carry alpha-pinene, which smells pine, turpentine. The science ↓

Parisian Nougats

Ingredients

Directions

Make the nougat

  1. Boil the sugar until it reaches the crack stage.

  2. Add the pistachios, cochineal, and vanilla, then mix gently.

Shape and cut

  1. Spread the nougat flat on a very lightly oiled baking sheet.

  2. Use a lightly oiled hard lemon to flatten the nougat to about 1/6 inch thick.

  3. Before it cools, sprinkle with small pieces of clean sugar and currants, pressing them in with your fingers.

  4. While hot, cut the nougat into small oblongs or diamonds measuring about 2.5 inches long by 1 inch wide.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pistachio kernels
Provide the main body, flavour and crunch of the nougat.
Sugar
Sets into a firm, chewy candy structure when boiled to the crack stage.

The step that matters

Boil the sugar until it reaches the crack stage. Sugar must reach the correct temperature to set firm but chewy when cooled. Undercooked sugar stays sticky, while overcooked sugar turns brittle or bitter.

Swap the pistachio

How well each one fits the dish's main ingredients (sugar, vanilla):

  1. Chestnutfits better
  2. Almondfits better
  3. Hazelnutfits better
  4. Pistachiothe original

Fit is the average pairing score against sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
