Ingredients

Directions

Prepare the honey and sugar

  1. Melt and skim the honey, then boil the sugar until it reaches the crack stage.

  2. Add the honey and orange-flower water to the sugar, stirring well.

Make the nougat

  1. Whip the egg whites to a stiff froth.

  2. Gradually pour the sugar mixture into the whipped egg whites while stirring quickly.

  3. Continue stirring the mixture over low heat until it reaches a consistency that can be snapped in cold water.

  4. This process takes about 3 hours of careful attention.

  5. Add the chopped almonds and mix well.

Assemble and cut

  1. Spread the mixture about 1 inch thick on 3 sheets of wafer placed on a baking plate.

  2. Cover with the remaining 3 sheets of wafer and press down with a baking plate.

  3. Allow to cool completely before cutting into oblong squares measuring 1.5 inches by 1 inch and ¼ inch thick.

What each ingredient does

Egg whites
Whipped into a stiff foam that gives the nougat its light, airy structure.
Honey
Adds sweetness and moisture and keeps the nougat soft and chewy rather than brittle.
Sugar
Cooked to the crack stage, it sets into the firm, chewy body of the nougat.
Almonds
Chopped nuts add texture and a crunchy bite throughout the nougat.
White wafer
Forms the top and bottom layers that hold the nougat and give a clean, flat base.

The step that matters

Adding the sugar mixture to the egg whites. Pouring the hot syrup in slowly while stirring quickly keeps the whipped foam from collapsing. Cooking the mixture to the right stage controls how firm it sets.

Swap the orange

How well each one fits the dish's main ingredients (egg, honey, sugar, almond):
