Green Gooseberry Jam

Ingredients

Directions

Prepare the fruit

  1. Pick the green gooseberries and place them in a copper preserving pan.

  2. Add enough water to reach halfway up the fruit and cover the pan.

  3. Boil gently until the gooseberries begin to burst, then remove from heat.

  4. Let the mixture sit covered in a cool place overnight.

  5. The next day, boil the mixture again.

  6. Rub the boiled mixture through a cane sieve into a large white pan.

Make the jam

  1. Boil an equal weight of sugar to the pulp until it reaches a pearl stage.

  2. Pour the pulp into the sugar.

  3. Stir on the fire until it thickens enough to hang in drops from a spoon.

Pot and seal

  1. Transfer the jam into gallipots.

  2. Cover the gallipots with circular pieces of paper dipped in brandy.

  3. Tie down with paper and string.

What each ingredient does

Green gooseberries
Provide the fruit pulp and natural pectin that give the jam its body and set.
Sugar
Sweetens the jam and, as it cooks down, helps it thicken and set.

The step that matters

Stir on the fire until it thickens enough to hang in drops from a spoon. Sugar and pectin only set when enough water has cooked off. Stopping too early leaves a runny jam, while overcooking can make it stiff and sugary.
