Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll the sweet dough into small rolls.

  2. Place the rolls in dusted-proof boxes and let them rest for 15 minutes.

  3. Press down crosswise with a rolling pin.

  4. Transfer to baking sheets and allow to rise until nearly full proof.

  5. Bake in a moderate oven at 350°F (175°C).

  6. Brush with sugar water after removing from the oven.

  7. Once cool, sprinkle with powdered sugar.
