Berlin Pan-cakes
Ingredients
Directions
Prepare Sweet Dough No. 1 or No. 2, keeping it very soft like doughnut dough.
Roll the dough into round balls and let them rise for 15 minutes.
Flatten each ball slightly with your palm.
Place a small amount of fruit jelly or jam in the center and pinch the edges to enclose the fruit, reforming a ball.
Lay the balls on a floured cloth, smooth side up, cover, and let them rise until nearly double in size.
Fry the balls in hot lard, turning them constantly until golden brown.
