Why it works: Hazelnut and vanilla match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 279 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Hazelnut Rings

Ingredients

Directions

The book says “a hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Roll out the yeast-raised pastry into a sheet 9 inches wide and 18 inches long.

  2. Spread the hazelnut paste over the pastry.

  3. Sprinkle with 2 oz of sugar and 2 oz of chopped orange peel.

  4. Roll the pastry starting from the upper end into a log shape.

  5. Form the log into a ring on a baking sheet, carefully bringing the ends together.

Rise and bake

  1. Allow to rise until nearly double in size.

  2. Brush the ring with an egg wash solution.

  3. Bake in a moderate oven at 350°F (175°C) until golden.

Finish

  1. After baking, frost with vanilla-flavored fondant.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Yeast-raised pastry
Forms the structure and, as a yeast dough, rises to give a light, airy texture.
Hazelnuts
Add nutty flavor and richness to the filling.
Sugar
Adds sweetness and helps the surface brown during baking.
Chopped orange peel
Adds a citrus aroma that brightens the sweet filling.

The step that matters

Joining the ends of the ring. The log must be sealed firmly into a ring so the filling stays inside and the ring keeps its shape while it rises and bakes. Gaps or a loose seam can open up in the oven.

Swap the orange

How well each one fits the dish's main ingredients (sugar, hazelnut, cream, vanilla):

  1. Blueberryfits better
  2. Figfits better
  3. Coconutfits better
  4. Orangethe original

Fit is the average pairing score against sugar, hazelnut, cream, vanilla. Candidates are from the same food group and used in at least 100 recipes.
