Flannel Cakes
Ingredients
Directions
Set a sponge with half of the milk and the yeast. Allow it to rest until it drops back.
Add the remaining ingredients and beat thoroughly.
Allow to rest for another 30 minutes.
If setting the sponge overnight, use ½ quart of milk and add the salt to the sponge with only ½ yeast cake.
In the morning, add the other half of the yeast cake, the rest of the milk, and the other ingredients. Allow to rest for 20 minutes.
It is then ready for the griddle.
