Three Layer Caramels

Ingredients

Directions

  1. Make a batch of Fine Caramel for Warm Weather.

  2. Pour out half of the caramel and mix in the liquor chocolate until smooth.

  3. Set the mixture on the furnace briefly and pour onto a greased slab, spreading it thin.

  4. Repeat with the vanilla caramel, ensuring both layers are the same size.

  5. In a pan over boiling water, melt the fondant and cream until smooth.

  6. Pour the melted cream over the chocolate caramel and spread it thin with a palette knife.

  7. Pat the cream with your hands until softened and the grain is broken.

  8. Turn the vanilla caramel upside down and wipe it with a damp cloth until sticky.

  9. Place the sticky side down on the cream layer and roll it with a rolling pin until well combined.

  10. Cut into pieces with a sharp knife.
