What each ingredient does

Glucose
Keeps the sugar from crystallising hard, giving the taffy a chewy, smooth texture.
Sugar
Provides sweetness and, when cooked, helps set the candy's firm body.
Spanish peanuts
Add roasted flavour and crunch, and browning deepens their taste as they cook.
Butter
Adds fat for richness and a softer, more tender bite.

The step that matters

Cook until the peanuts are brown and cracking. Cooking the syrup to the right point controls its firmness once cool. Undercooked taffy stays sticky, while overcooked taffy becomes hard and brittle.
