Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Glucose
Keeps the sugar from crystallizing too coarsely, giving a smooth, chewy texture.
Sugar
Provides sweetness and the structure that sets as the candy cools.
Butter
Adds fat for richness and a tender, softer bite.
Cream
Adds fat and milk solids that make the taffy lighter and creamier in colour and texture.
Walnut pieces
Add crunch and a nutty flavour that contrasts with the chewy candy.

The step that matters

Pulling the candy once it is cool enough to handle. Pulling while the sugar mass is warm but firm incorporates air and encourages fine crystals, which makes the taffy opaque and light. Pulling too hot makes it sticky and soft, and waiting too long makes it too stiff to stretch.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, butter, cream, vanilla):

  1. Almondfits better
  2. Chestnutfits better
  3. Hazelnutfits better
  4. Walnutthe original

Fit is the average pairing score against sugar, butter, cream, vanilla. Candidates are from the same food group and used in at least 100 recipes.
