Nougat for Dipping

Ingredients

Directions

Prepare the base

  1. Whip the egg whites in a kettle until stiff.

  2. Combine glucose, sugar, and water in another kettle.

  3. Heat and stir until dissolved.

  4. Cook the mixture to 250°F (120°C).

Make the nougat

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff foam that gives the nougat its light, airy structure.
Glucose
Inhibits sugar crystallization, keeping the nougat smooth and chewy rather than grainy.
Sugar
Provides sweetness and, once cooked to temperature, sets the firm body of the nougat.
Almonds
Add crunchy texture and nutty flavor throughout the set nougat.

The step that matters

Stirring in the cooked syrup while whipping the egg whites. Syrup must be poured in slowly while stirring briskly so the hot sugar cooks and sets the foam evenly. Pouring too fast or stopping can deflate the whites or leave uneven, grainy pockets.
