What each ingredient does
- Egg whites
- Whipped into a foam that gives the nougat its light, airy structure.
- Honey
- Provides sweetness and flavor and keeps the nougat soft and chewy.
- Sugar
- Adds sweetness and, when cooked to temperature, helps the nougat set firm.
- Glucose
- Inhibits crystallization, keeping the nougat smooth and tender rather than grainy.
- Almonds
- Add crunch and texture throughout the set nougat.
The step that matters
Heating the honey, sugar, and glucose to 260°F (127°C). Cooking the syrup to this temperature drives off water so the nougat sets firm when cooled. Undercooked syrup stays sticky, while overcooked syrup turns hard and brittle.
