What each ingredient does

Glucose
Keeps the sugar mixture smooth and stops it from crystallizing into grainy texture.
Egg whites
Whipped into a foam that gives the cake its light, airy structure.
Baking soda
Reacts with the hot sugar mixture to release gas, helping the cake rise and lighten.
Canadian maple sugar
Adds maple aroma and sweetness to the candy base.
Pecans
Adds crunch and nutty flavor throughout the cake.

The step that matters

Pouring the hot syrup over the egg whites. The syrup must be hot enough to cook the egg white proteins and set the foam. Pouring it too slowly or letting it cool lets the foam collapse and the cake turn dense.

Swap the pecans

How well each one fits the dish's main ingredients (sugar, egg):

  1. Pecansthe original
  2. Almondfits about as well
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
