Nut-chewing Taffy

Ingredients

Directions

Make the taffy base

  1. In a kettle, combine glucose, sugar, and water. Cook over heat until it reaches 275°F (135°C).

  2. Remove from heat and stir in the butter until well mixed.

  3. Pour the mixture onto a greased slab and let it cool until manageable.

Pull and add nuts

  1. Once cool, place the taffy on a hook and gradually work in the cream and vanilla flavor, adding a little at a time.

  2. Dust your hands with starch to prevent sticking while pulling the taffy.

  3. After pulling, knead in the walnut pieces.

Cut and wrap

  1. Spread the taffy on the slab, cut into squares, and wrap in wax paper. Alternatively, spin out, cut off in kisses, and wrap.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Glucose
Inhibits sugar crystallization, keeping the taffy smooth and chewy rather than grainy.
Sugar
Provides sweetness and the bulk of the candy's structure once cooked to temperature.
Butter
Adds fat for a softer, richer texture and smoother mouthfeel.
Cream
Adds moisture and dairy richness, softening the texture as it is worked in.
Walnut pieces
Add crunch and a toasty, nutty flavor that contrasts with the chewy base.

The step that matters

Cooking the base to 275°F (135°C). Sugar concentration depends on the final temperature. Undercooking leaves the taffy soft and sticky, while overcooking makes it hard. Reaching the target gives the right chew after pulling.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, butter, cream, vanilla):

  1. Almondfits better
  2. Chestnutfits better
  3. Hazelnutfits better
  4. Walnutthe original

Fit is the average pairing score against sugar, butter, cream, vanilla. Candidates are from the same food group and used in at least 100 recipes.
