Baked Apples

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Pour 1 cup of water into a baking dish.

Steam

  1. Place the apples in another dish and cover it tightly.

  2. Set the covered dish in the baking dish with water and steam the apples until tender.

Baste, chill and serve

  1. Once done, pour the cooking liquid over the apples while hot and repeat as they cool.

  2. Chill the apples in the ice for several hours before serving.

  3. Transfer the apples to a glass dish and pour the juice over them again.

What each ingredient does

Apples
Soften as they steam, becoming tender and giving the dish its body and flavor.

The step that matters

Steam the covered apples until tender. Covering the dish traps steam around the apples, so they cook gently and evenly with moisture instead of drying out at the surface.
