Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl barley
Its starch releases into the water, giving the drink its body and cloudy, mild flavour.
Sugar
Adds sweetness that balances the mild, grainy taste of the barley.
Lemon peel
Its aromatic oils flavour the water with a light citrus fragrance.

The step that matters

Washing the barley. Rinsing removes loose dust and surface starch from the grains, so the drink tastes clean rather than gritty or floury.

Swap the lemon
