What each ingredient does

Chipped beef
Releases its meaty, smoky flavor into the water to give the broth its character.
Sweet milk
Adds richness and a creamy, mellow body to the broth.

The step that matters

Heat slowly without boiling. Boiling makes the beef tough and can cause the milk to scorch, curdle or separate. Gentle heat in a double boiler extracts flavor from the beef while keeping the milk smooth.
