What each ingredient does

Neck of mutton or lamb
Gives the broth its meaty flavour and body as it simmers.
Crushed barley
Thickens the broth and adds a soft, chewy texture as it cooks.
Vegetables
Add sweetness, aroma and extra body to the broth during simmering.

The step that matters

Skimming the broth after cooling. Fat rises and solidifies on top of a chilled broth, so cooling overnight lets it be lifted off cleanly. Skipping this leaves the soup greasy.
