Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Tie the bran in cheesecloth and wash under cold water until the water runs clear.

  2. Bring the agar-agar and cold water to a boil.

  3. Add the salt and agar-agar solution to the washed bran while hot.

Shape and set

  1. Mold the mixture into two cakes and place them on oiled paper in a pan.

  2. Let the cakes stand for half an hour until firm and cool.

Bake

  1. Bake in a moderate oven at 350°F (175°C) for 30 to 40 minutes.

What each ingredient does

Bran
Provides the fibrous body and grainy texture of the biscuits.
Agar-agar
Gels the cold water so the mixture sets firm and holds its shape.

The step that matters

Adding the hot agar-agar solution to the bran. Agar sets as it cools, so it must be boiled fully dissolved and mixed into the bran while still hot. If it cools first, it can clump or set unevenly and the cakes will not hold together.
