Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Meat with bones
Releases gelatin, collagen and flavour into the water during long simmering.
Onion
Adds savoury sweetness and aromatic depth to the broth.
Carrots
Contribute natural sweetness and body to the broth.
Celery
Adds aromatic, savoury flavour to the broth.

The step that matters

Simmering gently for 2-3 hours. A rolling boil makes the broth cloudy and can emulsify fat into it. Keeping it at a gentle simmer gives a clearer, cleaner-tasting result while collagen slowly dissolves from the bones.

Swap the onion

How well each one fits the dish's main ingredients (meat, carrot, celery, pepper):

  1. Capsicumfits better
  2. Parsnipfits better
  3. Turnipfits better
  4. Onionthe original

Fit is the average pairing score against meat, carrot, celery, pepper. Candidates are from the same food group and used in at least 100 recipes.
