Galantine of Chicken Cut Up

Ingredients

Directions

  1. Cut the back of the chickens and remove the legs, pressing the remaining leg meat inside.

  2. Spread the chicken on a surface and remove any sinewy parts.

  3. In a bowl, mix the sausage meat, truffles, tongue, bacon, mushrooms, cayenne pepper, mixed herbs, gelatin, and egg yolks until well combined.

  4. Divide the mixture evenly between the two chickens, spreading it over the meat.

  5. Roll the chickens up lengthwise and secure them.
