Why it works: Beef and mushroom are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 3,232 recipes. Both carry 2,4-nonadienal, which smells fatty, green. The science ↓
Velouie and Bechamel Sauce
Ingredients
Directions
Make the stock
Cut the veal and beef into pieces and place in a large pot.
Cover the meat with water, about 1 inch above the meat, and bring to a rapid boil.
Skim off any foam, then let it boil for 6 hours.
If using in summer, add the calf's foot to the pot.
Make the sauce
Strain the stock and mix it with the white roux until thick, similar to double cream.
Let it simmer slowly until the butter from the roux rises, then skim off the fat.
Finish the sauce as you would for brown sauce, adding chopped mushrooms if desired.
Allow the sauce to boil well before straining through a tammy cloth.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Knuckle of veal
- Releases gelatin and body into the stock, giving the sauce a silky, full texture.
- Leg of beef
- Adds meaty depth and savoury flavour to the stock.
- White roux
- Flour and butter thicken the strained stock into a smooth, coating sauce.
- Trimmings of fowl or 1 old hen
- Contributes extra gelatin and poultry flavour to the stock.
The step that matters
Skimming the stock and the sauce. Foam and fat rising during the long boil cloud the liquid and taste greasy. Removing them keeps the stock clear and the sauce smooth and clean-flavoured.
