What each ingredient does

Cabbage
Forms the bulk of the soup and becomes tender and sweet as it simmers.
Bacon
Releases fat and savoury flavour into the stewpan as it cooks.
Carrots
Add sweetness and body to the soup as they soften.
Onions
Add savoury depth and aroma as they cook down into the broth.
Stock
Provides the liquid base that gently cooks and flavours the vegetables.

The step that matters

Skimming off any fat. Bacon releases fat during the long simmer, and removing it keeps the soup clean-tasting and less greasy.
