  1. Weigh the fish free from skin and bone, and shred it finely with a knife.

  2. Put the fish into a mortar and pound it well.

Make the cream

  1. Rinse a small saucepan with cold water to prevent sticking.

  2. Add the butter to the saucepan and heat it.

  3. Mix in the pounded fish, cream, milk, egg white, bread crumbs, pepper, salt, and lemon juice.

  4. Cook the mixture over low heat until it thickens, stirring constantly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish
Forms the body of the cream, giving it substance and a delicate flavour.
Egg white
Helps bind the mixture and set it as it cooks.
Cream
Adds richness and moisture, giving a smoother, softer texture.
Bread crumbs
Absorb liquid and help thicken the mixture.
Butter
Adds fat for richness and a smooth mouthfeel.

The step that matters

Cook over low heat, stirring constantly. Egg white and fish proteins set when heated, so high heat or stopping the stirring can scorch the base or cause it to curdle and turn grainy instead of thickening smoothly.

Swap the lemon
