Baked Haddock

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Rub the fish with lemon juice and salt, then let it stand for 3 hours.

  2. Season the bread crumbs with salt, white pepper, nutmeg, cayenne, and lemon rind.

  3. Beat the egg and set aside.

  4. Wipe the fish dry, brush it with egg, and sprinkle with the seasoned crumbs.

  5. Place the fish on a wire rack over a dish.

Bake and serve

  1. Preheat the oven to 350°F (175°C).

  2. Baste the fish with melted butter and bake for 25-30 minutes, longer if the fish is large.

  3. Strain the cooking liquid over the fish and serve immediately.

What each ingredient does

Haddock
Forms the main body of the dish, cooking into moist, flaky flesh.
Bread crumbs
Form a crisp, golden crust over the fish as they bake.
Egg
Acts as a binder so the seasoned crumbs stick to the fish.
Butter
Adds richness and moisture, and helps the crust brown as it bakes.
Lemon juice
Adds acidity that brightens the fish and seasons it through the resting time.

The step that matters

Baste the fish with melted butter and bake. Fish protein sets quickly and dries out past doneness, so the butter keeps the surface moist while the crumb crust browns. Watch the time, as larger fish need longer to cook through.

Swap the white pepper
