Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon
Forms the main body of the pudding and gives it its flavour.
Egg yolks and whites
Bind the mixture and set as it steams, giving the pudding structure.
Bread crumbs
Soak up milk to add body and a soft, moist texture.
Butter
Adds richness and moisture to the mixture.
Milk
Softens the bread crumbs into a smooth base and adds moisture.

The step that matters

Steam over fast-boiling water. The pudding must be kept at a steady, fast boil so it cooks through evenly and sets firm. Water that drops too low can leave the centre wet and loose.

Swap the garlic

How well each one fits the dish's main ingredients (bread, milk, butter, salmon, egg, anchovy, sauce):

  1. Capersfits better
  2. Nutmegfits better
  3. Parsleyfits better
