Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean mutton
Provides the main meat and rich flavour that the broth is built on.
Potatoes
Soften during simmering and thicken the soup as their starch releases into the broth.
Onions
Add sweetness and aromatic depth as they cook down into the broth.
Fat
Carries flavour and adds richness and mouthfeel to the soup.

The step that matters

Skim off the foam after boiling. Foam rising from meat contains impurities that can make the broth cloudy and taste scummy, so removing it keeps the soup clear and clean-tasting.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (mutton, pepper, onion, potato):

  1. Garlicfits better
  2. Parsleythe original
  3. Thymefits about as well
  4. Celeryfits about as well

Fit is the average pairing score against mutton, pepper, onion, potato. Candidates are from the same food group and used in at least 100 recipes.
