Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Spread the butter on the bottom of a fire‑proof porcelain dish.

  3. Layer the Gruyère cheese slices on top of the butter.

Bake and serve

  1. Crack the eggs over the cheese, keeping the yolks whole.

  2. Sprinkle with mignonette pepper and salt.

  3. Mix the chopped parsley with the grated Gruyère cheese and strew over the eggs.

  4. Bake for 10 to 12 minutes.

  5. Serve in the dish they were baked in.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set to a soft, tender structure while the yolks stay whole and runny.
Gruyère cheese
Melts into a savoury layer that browns and binds to the eggs.
Butter
Coats the dish and adds richness, preventing the cheese from sticking.

The step that matters

Crack the eggs over the cheese, keeping the yolks whole.. Eggs cook quickly in a hot oven, so overbaking sets the yolks firm. Keeping yolks intact and removing the dish from the oven at the right moment preserves a runny centre while the whites set.

Swap the parsley

How well each one fits the dish's main ingredients (butter, gruyere cheese, egg, pepper):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Thymefits about as well
  4. Tarragonfits less well

Fit is the average pairing score against butter, gruyere cheese, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
