What each ingredient does

Freshly-slaked lime
Dissolves into the water as calcium hydroxide, which gives the clear solution its alkaline character.

The step that matters

Carefully pour off the clear fluid. Undissolved lime particles settle to the bottom, and pouring too vigorously stirs them back in. The clear liquid above the sediment is the saturated solution, so disturbing it leaves the bottled lime water cloudy and gritty.
