What each ingredient does

Mutton loin
Provides the meat that becomes tender and rich during long, slow stewing.
Vinegar
Acid in the marinade that helps tenderise the meat before braising.
Claret
Adds acidity and wine flavour to the marinade and the finished sauce.
Carrots
Flavour base in the marinade, adding gentle sweetness to the braising liquid.
Onions
Flavour base in the marinade, adding savoury sweetness to the braising liquid.

The step that matters

Stewing the mutton for 3 hours. Long, gentle stewing breaks down connective tissue into gelatin, which makes the meat tender. Too fast or too hot a heat can toughen the meat and dry out the liquid.
