Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Provides the protein that forms the cakes' meaty texture and main body.
Butter
Adds richness and moisture to the cakes when served on the hot plate.

The step that matters

Scraping the minced meat. Scraping removes tough fibers and connective tissue left after mincing. Leaving them in gives chewy, uneven cakes, so the pulp should be smooth and free of gristle before molding.

Swap the celery

The recipe marks celery as optional. How well each one fits the dish's main ingredients (beef, butter, pepper, sauce):

  1. Parsleyfits better
  2. Tarragonfits better
  3. Thymefits about as well
  4. Celerythe original

Fit is the average pairing score against beef, butter, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
