Why it works: Flour and almond are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 8,673 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Gluten Bread

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the sponge

  1. Make a sponge with the gluten flour, prepared bran, and yeast.

  2. Set it to rise for about 45 minutes.

Mix and bake

  1. Add ground almonds and beaten eggs to the sponge, mix well, and pour into a baking pan.

  2. Bake in a preheated oven at 350°F (175°C) until golden.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Flour and egg barely smell alike, yet cooks put them together in 106,462 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gluten flour
Gluten proteins form a stretchy network that traps gas and gives the loaf its structure.
Yeast
Yeast feeds on sugars and releases carbon dioxide, which makes the sponge rise.
Prepared bran
Bran adds bulk and a coarser texture, and absorbs water in the dough.
Eggs
Eggs bind the mixture, add moisture, and help set the crumb as it bakes.
Ground almonds
Ground almonds add richness and moisture, and help the crumb stay tender.

The step that matters

Letting the sponge rise. Yeast needs time to produce enough carbon dioxide to lift the sponge. Adding the eggs and almonds before it has risen can leave the loaf dense, because the gas network the gluten builds has not yet formed.

Swap the almond

How well each one fits the dish's main ingredients (flour, egg):

  1. Almondthe original
  2. Milletfits about as well
  3. Macadamia nutfits less well
  4. Chestnutfits less well

Fit is the average pairing score against flour, egg. Candidates are from the same food group and used in at least 100 recipes.
