Lean Meat Cakes

Ingredients

Directions

  1. Remove all fat, fascia, connective tissue, and bone from the beef.

  2. Shred the meat on a board using a blunt knife.

  3. Scrape the pulp together with a spoon, discarding tough parts.

  4. Mold the scraped pulp into cakes about ½ to 1 inch thick.

  5. Broil the cakes slowly over a clear fire free from smoke.

  6. Serve on a hot plate with a little butter and season with pepper and coarse sea salt.

  7. Add Worcestershire sauce, mustard, horseradish, lemon juice, or dry celery for flavoring if desired.
