What each ingredient does

Milk
Its milk proteins, mainly casein, clump together to form the curds.
Lemon juice or rennet
Acid or enzyme that makes the milk proteins coagulate into curds.

The step that matters

Stir gently after adding the lemon juice or rennet. Gentle stirring lets the proteins join into soft, large curds. Vigorous stirring breaks the forming curds into fine particles, so less of them separate out cleanly when strained.
