What each ingredient does

Wheat meal
Its starch swells and thickens the water into a gruel as it heats.
Fresh milk
Adds creaminess, body and a mild sweetness to the thin gruel.

The step that matters

Boiling the wheat and water. Heat makes the wheat starch swell and thicken the liquid. If the mixture is boiled too briefly, the starch does not fully swell and the gruel stays watery and thin.
