Water Gruel

Why it works: Pepper and nutmeg match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Water Gruel

Ingredients

Directions

Prepare

  1. Ask the butcher to break the bones of the beef.

  2. Place the beef in a large soup pot and cover with cold water.

Make the broth

  1. Heat gradually until nearly boiling, skimming off any scum that rises.

  2. Once clear, boil for 8 to 10 hours, then strain through a fine sieve into a pan.

  3. Cool the broth quickly and remove any fat from the top.

  4. Pour the broth through a fine sieve into a stewpan, avoiding the sediment at the bottom.

  5. Add the black pepper and boil briskly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Bones and connective tissue release gelatin and flavour into the water during long simmering.
Whole black pepper
Adds aromatic warmth that infuses into the broth as it boils.

The step that matters

Skimming the scum as the broth heats. Heating gradually and skimming rising scum removes impurities that would otherwise cloud the broth and spoil its flavour, so it turns out clear.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (beef, pepper, wine, sugar):

  1. Rosemaryfits better
  2. Cinnamonfits better
  3. Thymefits better
  4. Nutmegthe original

Fit is the average pairing score against beef, pepper, wine, sugar. Candidates are from the same food group and used in at least 100 recipes.
