Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Mash the boiled turnips and press out most of the water.

  2. Mix the mashed turnips with an equal weight of wheat flour.

  3. Add yeast, salt, and warm water to the mixture.

  4. Knead the dough until smooth.

  5. Let the dough rise in a warm place until doubled in size.

Bake

  1. Shape the dough and place it in a baking pan.

  2. Bake in a preheated oven at 350°F (175°C) until golden brown.

What each ingredient does

Turnips
Provide moisture and bulk, forming the body of the bread in place of much of the flour.
Wheat flour
Forms the gluten network that gives the dough structure and holds its shape.
Yeast
Ferments sugars in the dough, producing gas that makes the bread rise.

Swap the turnip

How well each one fits the dish's main ingredients (wheat, flour):

  1. Arrowrootfits better
