What each ingredient does

Fresh milk
Forms the base that the pepsin curdles into a soft, set custard.
Fairchild’s essence of pepsin
Enzyme that curdles the milk, causing it to set into a firm, delicate curd.

The step that matters

Let it stand until firmly curdled. Pepsin needs time undisturbed to coagulate the milk proteins into a set curd. Moving or stirring the cups before setting breaks the curd and leaves it grainy or runny.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar, wine):

  1. Cinnamonfits better
  2. Gingerfits about as well
  3. Nutmegthe original
  4. Clovefits about as well

Fit is the average pairing score against milk, sugar, wine. Candidates are from the same food group and used in at least 100 recipes.
