Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Knuckle of veal
Breaks down into gelatin as it cooks, giving the broth its jelly-like set when chilled.
Mutton
Adds meat flavour and more gelatin-rich connective tissue to the broth.
Turnip
Contributes a mild, subtly sweet vegetable flavour to the stock.
Celery
Adds aromatic savoury flavour to the broth.

The step that matters

Skim off the fat carefully. Fat that is not removed once the liquid has cooled slightly can make the jelly greasy and cloudy in the finished set. Careful skimming leaves a clearer, cleaner-tasting jelly.

Swap the celery

How well each one fits the dish's main ingredients (veal, turnip, mutton):

  1. Capersfits better
  2. Celerythe original
  3. Parsleyfits about as well
  4. Marjoramfits about as well

Fit is the average pairing score against veal, turnip, mutton. Candidates are from the same food group and used in at least 100 recipes.
