What each ingredient does

Rice flour
Its starch thickens the broth as it heats, giving the soup body.

The step that matters

Dissolve the rice flour in cold broth first. Rice flour starch clumps when it meets hot liquid directly. Dissolving it in cold broth and breaking up lumps before adding hot bouillon keeps the soup smooth as the starch swells.
